Last night, I made fritattas.
Mmm. If you're an egg lover, they were... really good. I sauteed up some minced garlic in oil, then added diced orange peppers and let them cook a while. Added 4 eggs and a bunch of feta cheese and some soy sausage, pepper and onion salt, topped it all with some hot paprika, and let it cook. Once the bottom was nicely seared I folded it in half and let it finish cooking. Topped it with sliced green onion and roasted red pepper sauce.
Today I got to play the voice of experience for a bunch of massage school students. That was fun. I like doing it. I saw a teacher I used to work with there but haven't seen in ages and she said I should come back and TA for her again. Hahahaha, yeah. But I might take her spa class that she teaches, and then TA. Nothing like reinforcement in massage technique.
Tonight (hey! it's my past 24 hours in a nutshell, how 'bout that) we get to go to Hannah's school for Poetry Cafe, where all the 5th- and 6th-graders share the poems they've written over the year. I have a sneaking suspicion I'm going to be asked to get up on stage and read a poem with Hannah. *dresses for the occasion* And then we scurry home for the Lost grand finale, and then tomorrow's officially Just Another Day, then it's a 4-day weekend with Pirates.
Crap. The Red Sox are losing. So it goes. That's the peril of my darling husband having subscribed to the MLB package on cable.
I bought new shoes and a new shirt. I deserve them both.
Tomorrow's my day off for the week. I'm glad, because I have to work Saturday. I really can't wait for summer when I can sleep late and stay up even later. I'm like a little kid counting the days. Hey, if this is one of the perks of being a mom, I'll take it.
